If it is truly your WiFi causing the problem then the resolution isn't what you [necessarily] need to change. You need to limit the maximum bit rate.
Serviio can do this by adding the maxVBitrate command to the transcoding instructions. However, before exploring this (which is painful as it will require transcoding all your files, and like NX3 I have reservations about your NAS's ability to transcode 1080p video on the fly) you may want to confirm that it is the WiFi causing the issue and not something else. Try running a cable to the PS3 temporarily, or turning off all other wireless devices or simply moving the PS3 closer (WiFi performs decreases with distance) and seeing if that improves things.
I presume your NAS is wired to the router and not also WiFi. I am also assuming you are running Serviio on the NAS itself, not on a PC to which the NAS is connected?
ps. What file types are we talking about here? Is it an MKV or MP4? If its MKV try remuxing it to MP4 - the PS3 handles these much better. Maybe post MediaInfo details for a file.
